Ingredients

40 minutes
6 servings
  • 1 lbground beef (browned and drained)
  • 1large onion, chopped
  • 1large green bell pepper, chopped
  • 4 cupsbeef broth
  • 1 (14.5 oz)can fire roasted diced tomatoes, undrained
  • 1 (15.5 oz)can pinto beans, undrained
  • 1 (15.25 oz)can corn, drained
  • 1large baking potato, peeled and cubed
  • 1 Tbspchili powder
  • 1 TbspWorcestershire sauce
  • 1 tsppaprika
  • 1/2 tspground cumin
  • Salt & black pepper, to taste

Steps

40 minutes
  1. 1

    Heat a large stock pot over medium‑high. Add the ground beef and chopped onion.
    Cook until the beef is no longer pink and the onion is softened, about 5 minutes.
    Drain excess grease.

  2. 2

    Add the bell pepper, beef broth, tomatoes, pinto beans, corn, potato, chili powder, Worcestershire sauce, paprika, and cumin.

    Bring to a boil, then reduce heat and simmer for 40 minutes, until the potatoes are tender and the flavors come together.

    Taste and season with salt and pepper.
