Texas Twinkie Meatloaf
A meat lover’s dream, with a kick!

In a medium skillet, cook bacon until crispy. Remove from skillet with slotted spoon and set aside, reserving drippings. Add onion to skillet and cook until tender, about 4 minutes.

Mix ground beef, egg, panko, cooked onion, and seasonings until well combined. Place 2/3 of meat mixture in a ~9” x 5” loaf pan. Press meat into bottom and around sides of loaf pan, creating a well.

Layer half of the brisket, cheese, jalapeños, and bacon into the meat well. Repeat layers using all of the filling.

Carefully add the remaining 1/3 of the meat mixture on top of the filling, pressing around the sides to seal the filling inside. Baste the top of the meatloaf with half of the barbeque sauce. Bake in 350 degree oven for 45 mins. Baste again with remaining barbeque sauce, and cook for another 45 mins. I like to place this under the broiler for 2-3 mins to crisp the top crust, but that is to preference.

Let stand for 5 minutes before slicing. Serve and enjoy!
