No-Churn Ice Cream Base with Whipping Cream

#mybestrecipe #dessert #sweet #party
No, making ice cream at home using store-bought whipping cream neither makes it drastically cheaper nor does it make it healthy. Then why should one make it at home? - to give it the flavour of your choice; to bring out the creativity in you and create something unique.
This base is perfect to serve as plain vanilla ice cream or to add flavour to it.
What kind of cream should be used? Definitely NOT the milk cream extracted from milk at home. Ideally whipping cream that has 35% or more fat content is the best for the sake of its creamy and smooth texture. But you can also use the dessert/pouring/baking cream(Check the pic attached in step no.5).

Steps
- 1
Whisk condensed milk, vanilla, and salt in a bowl until smooth. In case you decide to add sugar to the cream, use powder sugar and add only after whipping the cream till soft peaks.
- 2
Whip cold cream to stiff peaks.
- 3
Gently fold whipped cream into condensed milk mixture, keeping it airy.
- 4
Pour into a container, cover with cling wrap touching the surface, and freeze for 6-8 hours. If you want to make it flavoured, fold-in the flavour of your choice in the form of fruit juice/soaked saffron/flavoured syrup/nutella etc before freezing it. You may also add the nuts that go with the flavour. ADJUST THE QUANTITY of CONDENSED MILK BASED ON THE SWEETNESS OF THE FLAVOUR. if adding nuts, let the icecream freeze a bit and then fold in the nuts. This will prevent the nuts from sinking down

Some of the possible flavours are - kesar pista, kaju draksh, brownie ice cream, chocolate and hazelnut, chocolate chips, jambu ice cream, bundi/gulab jamun ice cream, choco chips, mango, sitafal, dates and fig etc.

I used this cream. But it is highly recommended to use the whipping cream for the best results.
Tips
If using sweetened whipping cream, reduce the amount of sweetened condensed milk to 300g (3/4 can) and taste the base before freezing. If it's too sweet, fold in an extra 1/2 cup of whipped cream to balance.
