Steps
- 1
In a mixer jar, combine leftover cooked rice, milk and sugar. Blend until smooth or slightly coarse, according to the texture you prefer.
- 2
Heat ghee in a heavy-bottomed pan. Add the prepared rice-milk mixture. Cook on medium flame, stirring frequently to prevent the mixture from sticking to the bottom.Continue cooking until the mixture gradually thickens and loses its excess moisture.
- 3
Add saffron strands, cardamom powder and almond flakes. You can also add chopped cashews, pistachios or other dry fruits of your choice.
Mix well and continue cooking. - 4
Cook until the mixture becomes thick like a soft mass and starts leaving the sides of the pan. This is the right stage for setting the barfi.
- 5
Grease a plate or tray with a little ghee. Transfer the hot mixture into it and spread evenly.
Let it come to room temperature, then refrigerate for a few hours until completely set.
Once firm, cut into your desired shape—squares, diamonds or rectangles. - 6
Garnish with a few extra almond flakes or pistachios, if desired.
Your delicious Rice Barfi is ready! ♻️🍚
