Khira Santula is a comforting traditional Odia mixed-vegetable preparation. A medley of brinjal, potato, carrot, drumstick, coccinia and raw papaya is cooked with a fragrant tempering of mustard, cumin, kalonji, garlic, ginger and curry leaves. Milk adds a delicate richness, while pepper, garam masala, green chilli and cardamom give the dish its distinctive aroma and flavour. Best enjoyed with hot steamed rice.

Ingredients

  • 1 bowlVegetables
  • 1 tbspOil
  • 1/2 tspMustard
  • 1/2 tspCumin
  • 1/4 tspKalonji
  • 3Dry red chillies
  • 6pounded garlic
  • 3/4 tspgrated ginger
  • leavescurry
  • 1 tspSalt (adjust as per taste)
  • PinchTurmeric (optional)
  • 1/2 tspFreshly pounded black pepper powder
  • PinchHing
  • 180 mlmilk
  • 1/2 tspGaram masala
  • 2pounded green cardamoms
  • as neededWater
  • leavesChopped coriander
  • 2Fresh green chillies

Steps

30 mins
  1. 1

    Heat oil and add mustard seeds, cumin seeds and kalonji. Allow them to splutter.

    Add pounded garlic, grated ginger, dry red chillies and curry leaves. Saute until fragrant.

    Add all the chopped vegetables and mix well. Add salt, turmeric (optional), black pepper powder and asafoetida.

    Add water, cover and cook until the vegetables are almost tender.

    Pour in milk and gently simmer until the vegetables are fully cooked and the curry reaches your preferred consistency.

    Add garam masala, green chillies, coriander leaves and pounded green cardamom.

    Simmer for a couple of minutes and switch off the heat.
    Serve hot with steamed rice.

Tips

Cut the vegetables into similar-sized pieces so they cook evenly.

Add milk after the vegetables are nearly cooked to prevent prolonged boiling of the milk.

Cook on low to medium heat after adding milk and stir gently to prevent it from sticking to the bottom.

Add the pounded cardamom and fresh coriander towards the end so their aroma remains fresh.
