Cut the grass jelly into small cubes and set aside.

To make the caramel syrup, add caramel sugar, brown sugar, and water to a saucepan.

Stir to combine, then heat over medium heat.

Wait until the mixture comes to a boil (stir gently, no need to stir vigorously) and starts to thicken. Remove from heat and let cool.

To make the fresh milk snow ice, add ice cubes and evaporated milk to a blender. Blend on high speed until the ice and milk form a crushed, snow-like texture (it doesn't need to be too fine, so it won't melt too quickly when served). Place in the freezer until ready to use.

When ready to serve, drizzle a little caramel syrup around the inside edge of the glass for decoration.

Add the fresh milk snow ice to fill about 2/3 of the glass.

Add the grass jelly cubes to fill the rest of the glass.

Pour the remaining caramel syrup over the top and sprinkle with brown sugar. Serve immediately.

Before eating, stir everything together to combine.
