Celeriac Steak with Almond Butter Caper Sauce

ROOTING FOR CELERIAC! 🌱😍
Who says root veg has to be chopped up, cubed or mashed into submission? Not me!
LOOK AT THE STATE OF THIS BEAUTY! ❤️
A proper big, thick slice of celeriac, pan-fried until beautifully golden and caramelised on the outside, soft and tender in the middle. Sitting pretty on a silky celeriac purée, with the most gorgeous almond butter and caper sauce drizzled all over it.
Nutty, buttery, salty little pops of caper goodness, a bit of thyme and some lovely roasted garlic for good measure.
Honestly, why should meat have all the fun when a humble root vegetable can put on a performance like this?
It’s all about giving vegetables a bit of love, thinking outside the (veg) box and making something seriously good out of ingredients that sometimes get overlooked.
Celeriac, you’ve absolutely understood the assignment. 😉

Steps
- 1
Peel and slice celeriac into thick rounds for steaks. Reserve trimmings for puree.
- 2
Sear celeriac steaks in olive oil until golden on both sides.
- 3
Add veggie stock, thyme, and garlic. Simmer until tender.
- 4
Brush with agave syrup and roast in oven at 200°C until caramelized.
- 5
For puree, boil celeriac trimmings until soft, then blend with almond milk, vegan butter, salt, and pepper.
- 6
For sauce, mix almond butter, capers, lemon juice, and a bit of veggie stock until smooth.
- 7
Plate with celeriac steak on puree, drizzle with sauce, and garnish with thyme.
Tips
Cooking the celeriac as a fondant in veggie stock adds depth of flavor, and the agave glaze gives a beautiful caramelization.
