Ingredients

  1. 400 Gramschicken thighs , boneless , skinless
  2. 2 Teaspoonsgarlic paste
  3. 1celery stalk
  4. 2spring onions
  5. quartered 1 Cupgrapes , seedless ,
  6. 1/2 Cuppecans , toasted
  7. 1 Cupsour cream
  8. 1/2 Cupmayonnaise
  9. 2 Tablespoonsbrown sugar
  10. 2 Tablespoonslemon juice
  11. 2 Tablespoonsdill , finely chopped
  12. salt
  13. pepper

    Prepare the chicken pieces by marinating them with garlic paste and a bit of freshly cracked pepper.

  2. 2

    Cook the chicken in a non-stick dish with a tad bit of water added to it, covered, on a low flame. the chicken should be just done (opaque on all sides).

  3. 3

    When the chicken is cooked, take it off the heat and let it rest till almost room temperature. chop into bite sized pieces.

  4. 4

    Chop the celery stalk and spring onions into thin pieces. set aside.

  5. 5

    In a large salad bowl, mix together the sour cream, mayonnaise, brown sugar, lemon juice, salt and pepper. add the dill and stir well.

  6. 6

    Add the remaining ingredients and toss well to coat with the dressing.

  7. 7

    Best served on rye or multi-grain toast, with either shredded iceberg lettuce or baby spinach and honey mustard dressing. :)

Hey! I'm a super busy mommy to 3 year old mixed gender twins. I guess that's enough said about the amount of time i get to spend cooking :). Most of the food I cook is about saving time, but not compromising on flavour. My biggest supporter is my hubby, who loves trying out new recipes and experimenting with different flavours. We love entertaining friends, and our home is the usual watering hole in our gang. So we try to come up with some innovative, fun food. Hope u guys like them!
