Ingredients

  • 1/2 cupuncooked quinoa
  • 1 tbspextra virgin olive oil
  • 1large yellow onion, diced
  • 4 clovesgarlic, minced
  • 1 candiced tomatoes (28 oz)
  • 1 cancan tomato sauce (15 oz)
  • 1 1/2 cupswater
  • 1 candiced green chiles (7 oz)
  • 2 1/2 tbspchili powder
  • 2 tspground cumin
  • 2 tspcocoa powder
  • 1/2 tsppaprika
  • 1/2 tspgranulated sugar
  • 1/2 tspground coriander
  • 1/2 tspcayenne pepper
  • to tastesalt and black pepper
  • 2 cansred kidney beans, drained and rinsed (15 oz)
  • 1 canblack beans, drained and rinsed (15 oz)
  • 2 tbspcilantro
  • 1juice of lime

    Cook quinoa according to package instructions.

  2. 2

    Heat olive oil in a large enameled cast iron pot over medium-high heat.

  3. 3

    Once oil is hot add onion and saute until tender, about 4 minutes, adding in garlic during last 30 seconds of sauteing.

  4. 4

    Add in diced tomatoes, tomato sauce, cooked quinoa, water, green chiles, chili powder, cumin, cocoa, paprika, sugar, coriander, cayenne pepper, and season with salt and pepper to taste.

  5. 5

    Bring mixture just to a boil, then reduce heat to simmer, cover pot, and allow to simmer 30 minutes.

  6. 6

    Add in all beans, cilantro, and lime juice and cook until heated through.

  7. 7

    Serve warm with optional toppings and sides (cheddar, sour cream, diced avocados, etc.)
