Ingredients

  1. 2 cupsfine bulgur (about 320 grams)
  2. 1 cupfine semolina (about 160 grams)
  3. 3-4 cupsboiling water (710 to 950 ml)
  4. Salt
  5. Cumin
  6. 1 teaspoonground coriander
  7. 1 teaspoonblack pepper
  8. 1 teaspoonpaprika
  9. For the filling:
  10. 2.2 poundsground beef or lamb (1 kilogram)
  11. 3medium onions
  12. Salt
  13. Mixed spices
  14. Parsley
  15. Pine nuts or pomegranate seeds
  16. Oil for frying

Steps

    In a large bowl, combine the bulgur, semolina, and boiling water. Let it sit for 30 minutes.

    Grind the mixture using a meat grinder or food processor.

  3. 3

    Add the spices and grind the mixture again.

  4. 4

    If the dough is not soft enough, add a little more water.

  5. 5

    Knead the mixture by hand until it becomes very firm and cohesive.

  6. 6

    Prepare the filling.

  7. 7

    Shape the kibbeh by making an opening in the center, fill with the meat mixture, and seal well. Enjoy!
