Melon Gazpacho with Ham by chusmi

I made this recipe from a magazine I always trust. I liked it, made it, and it turned out great—everyone enjoyed it! But it's very filling, so be careful if you're planning to serve a main course afterward.

Steps
- 1
Cut the melons in half and scoop out the flesh into a bowl, removing all the seeds.
- 2
Chop the half onion and the small cucumber, then add them to the melon.
- 3
Blend everything together with an immersion blender, slowly drizzling in olive oil until the mixture thickens. Add vinegar and salt to taste.
- 4
Chill in the refrigerator for at least 4 hours. When ready to serve, fill the melon halves with the gazpacho, top with the chopped ham, and enjoy cold.
