Ingredients

Serves 4 servings
  1. 2Galia melons
  2. 1/2sweet onion (such as Vidalia)
  3. 1small cucumber
  4. Olive oil, vinegar, and salt to taste
  5. 1 ozfinely chopped ham (about 25 grams)

    Cut the melons in half and scoop out the flesh into a bowl, removing all the seeds.

  2. 2

    Chop the half onion and the small cucumber, then add them to the melon.

  3. 3

    Blend everything together with an immersion blender, slowly drizzling in olive oil until the mixture thickens. Add vinegar and salt to taste.

  4. 4

    Chill in the refrigerator for at least 4 hours. When ready to serve, fill the melon halves with the gazpacho, top with the chopped ham, and enjoy cold.
