Cut the melons in half and scoop out the flesh into a bowl, removing all the seeds.

Chop the half onion and the small cucumber, then add them to the melon.

Blend everything together with an immersion blender, slowly drizzling in olive oil until the mixture thickens. Add vinegar and salt to taste.

Chill in the refrigerator for at least 4 hours. When ready to serve, fill the melon halves with the gazpacho, top with the chopped ham, and enjoy cold.
