Ingredients

  1. 12eggs
  2. 1 lb (2 oz)tomatoes (500 grams)
  3. 5 1/2 tablespoonsbutter (75 grams)
  4. 2 1/2 ozcrumbled feta cheese (75 grams)
  5. 1 tablespoonheavy cream
  6. 2 clovesgarlic, minced
  7. 2 pinchessugar
  8. 1 pinchoregano
  9. Salt, black pepper, and red pepper
  10. Chopped parsley

Steps

  1. 1

    Add the peeled and finely chopped tomatoes with their juices, salt, peppers, oregano, sugar, garlic, and butter to a skillet. Simmer the tomatoes until all their liquid has evaporated and the mixture thickens.

  2. 2

    Add the beaten eggs, feta cheese, and heavy cream. Whisk quickly and vigorously so the eggs stay soft and do not fully set.

  3. 3

    Serve plain or on toasted bread, sprinkled with chopped parsley.
