Ingredients

20-24 pieces
  1. 3 cupsfull-fat yogurt, at room temperature (about 750 grams)
  2. 3 cupscoarse semolina (about 500 grams)
  3. 2 cupssugar
  4. 1 tablespoonbaking soda
  5. 1 cupwater
  6. Butter, for greasing
  7. For the syrup
  8. 4 cupswater
  9. 5 cupssugar (about 1 kilogram)
  10. 1 tablespoonlemon juice
  11. Lemon zest

Steps

    In a bowl, mix the yogurt with the sugar, then add the baking soda dissolved in 1 cup of water.

  2. 2

    Gradually add the semolina, stirring well to avoid lumps, until the mixture is smooth.

  3. 3

    Generously butter a 14-inch (35 cm) round baking pan and bake the Samali in a hot oven at 400°F (200°C) for about 30-40 minutes, until golden brown.

    When the cake is done, cut it into pieces with a knife while still in the pan.

  5. 5

    For the syrup: In a saucepan, combine the water, sugar, lemon juice, and lemon zest. Boil for 10-15 minutes. Pour the hot syrup over the warm cake. Serve with ice cream if desired.
