Ingredients

Serves 6-8 servings
  1. Ingredients for a large baking pan
  2. 1.1 lbsphyllo dough (about 500 grams)
  3. 1 1/2 lbsspinach (about 680 grams)
  4. 1 bunchgreen onions
  5. 1 bunchdill
  6. 1 bunchchervil or wild celery (or substitute parsley)
  7. 10.5 ozfeta cheese, coarsely crumbled (about 300 grams)
  8. Salt and pepper
  9. 1small wine glass olive oil (about 1/2 cup or 120 ml) for brushing the phyllo and pan, plus a little for sautéing
  10. For finishing
  11. 2eggs, lightly beaten
  12. 1 cupmilk (240 ml)
  13. 1 cupclub soda (240 ml)
  14. Salt, pepper

Steps

  1. 1

    Wash the spinach thoroughly, let it drain, and cut it into medium pieces. Do the same with the green onions, and finely chop the herbs.

  2. 2

    Sauté the spinach and green onions in a little olive oil, season with salt and pepper, and cook until the liquid evaporates. Let cool slightly, then add the dill and herbs, mixing everything together.

  3. 3

    Brush the baking pan well with olive oil. Layer 3 sheets of phyllo, brushing each with oil. Add half the filling, then sprinkle with half the feta cheese.

  4. 4

    Layer 2 more sheets of phyllo on top, add the remaining filling and feta, and finish with 3 more well-oiled phyllo sheets.

  5. 5

    In a bowl, beat the eggs, then add the milk and club soda, whisking well to combine.

  6. 6

    Score the top of the pie, pour the egg-milk-soda mixture over it, and bake in a preheated oven at 375°F (190°C) for about 45 minutes.
