Ingredients

  • 1 boxpasta (I used fettuccine noodles, any will work fine)
  • 1 tablespoongarlic
  • 1 cupfresh spinach
  • 1ripe avacado
  • 1/2 cupchicken stock (can use beef or veggie instead)
  • 1 squeezefresh lemon
  • to tasteSalt and pepper
  • 1 tablespoonextra virgin olive oil

Steps

  1. 1

    Cook pasta per directions, as you would with any other pasta dish. Add extra virgin olive oil to the water as well.

  2. 2

    Combine all other ingredients into a blender and blend until smooth.

  3. 3

    Combine noodles with sauce. Should be eaten in the first day as avocado turns brown rather quick.

  4. 4

    Side note- it's VERY delicious with cheese ontop. I used mozzarella. ENJOY ❤️
