Clean and wash the amaranth greens thoroughly.

Pour some oil into a wide pot.

Add the finely chopped onion and sauté together with the amaranth greens.

Add the zucchinis and continue until they let out their liquids.

Add the potatoes, stir them so that they get coated in oil, then add the tomato paste and the fresh, grated tomato.
