Peel the cucumber and remove the seeds then cut it into small cubes or strips (or grate it), season with salt and set it aside with the salt for 15'.

Then strain and squeeze it.

Place the yogurt, the pepper and the herbs, finely chopped, in a bowl and add the oil, the garlic, crushed, as well as the cucumber. Mix with a wooden spoon until everything is evenly distributed and the mixture is well combined.
