Mint Chocolate Chip Brownie Ice Cream Bars

These ice cream bars are easy to make, the hardest part is waiting for the layers to freeze. The wait is rewarded with a delicious chewy brownie bottom, mint chocolate chip ice cream layer covered with chocolate and whipped cream then frozen for a amazing taste combination!

Mint Chocolate Chip Brownie Ice Cream Bars

Ingredients

15 servings
  1. Brownie Layer
  2. 4 ouncesunsweetened chocolate
  3. 1/2 cupunsalted butter
  4. 4large eggs
  5. 2 cupsgranulated sugar
  6. 1/4 teaspoonsalt
  7. 1 cupall purpose flour
  8. 1 teaspoonvanilla extract
  9. Ice Cream Layer
  10. 1 halfgallon container of mint chicolate chip ice cream
  11. Chicolate Layer
  12. 1 cupheavy cream
  13. 3/4 cupsemi sweet or milk chocolate chips
  14. Whipped Cream Topping
  15. 1 1/2 cupsheavy whipping v feam
  16. 1/4 cupconfectioner's sugar
  17. 1 teaspoonvanilla extract
  18. Garnish
  19. I used my Extra Creamy Mint Bark, broken up, on my profile or use any mint chocolate candy, shaved

Cooking Instructions

    Preheat the oven to 350. Line a 9 by 13 baking pan with foil with ends of foil extending over sides of pan for easy removsl. Spray foil with bakers spray

    Melt butter and chocolate in the microwave just until melted and stir smooth. Cool to room temperature

    In a bowl beat eggs, vanilla, sugar and salt until light and we'll combined

    Stir in chocolate just to blend

    Stir in flour just until uniform in color

  6. 6

    Pour into prepared pan and bake 20 to 25 minutes until a toothpick comes out with a few moist crumbs. Cool completely on rack

    MAKE Ice cream Layer

    Allow the ice cream to soften enough to be able to spread at room tempersture, about 10 to 15 minutes

    Spread ice cream evenly over brownies in pan and place in freezer until hard

    Make Chocolate Layer

    Heat cream in the microwave until hot but not boiling. Pour over chocolate chips in a bowl. Let sit one minute, then stir until smooth, allow to cool to room temperature about 10 minutes

    Pour chocolate over frozen ice cream layer and smooth over, return to freezer while preparing topping

    Make Topping

    Whip cream until it holds its shape

    Add sugar and vanilla and beat until firm

    Spread over chocolate layer, garnish with Extra Creamy Mint Bark.

    Freeze at least 3 hours before cutting Into bars

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site.
