Make the doughPlace the flour in the mixer bowl, make a well and add the ingredients. Knead until you have a soft pliable dough.

Divide into six small balls.

Set aside to rest for a while.

Prepare the fillingPlace the zucchinis that you had left with the salt into a bowl after squeezing them thoroughly.

Continue by adding all the ingredients one by one and mix.

Brush the baking tray with oil.

Roll out two filo sheets larger than the baking tray and fan them out brushing them with oil.

Add half the filling.

Place two more filo sheets (brushing them with oil).

Add the rest of the filling and cover with the last filo sheets.

Make the last filo sheet larger and shift it around as you fan it out so that it wrinkles.

When you are done, roll the excess top filo sheets (the ones that are larger) inwards to form a decorative ring around the perimeter of the pie.

Score the pie into pieces and brush with oil.

Bake at 180°C for one hour.
