Spread out one of the puff pastry sheets and cut it into a circle. I use one cake ring as a guide.

Cut out the puff pastry and place it in the baking tray.

For the fillingwash the spinach thoroughly, blanch it and then let it strain for 5'. Then cut it and place it in a bowl together with the egg, the herbs, the feta cheese and the breadcrumbs. Attention! Make sure that the filling doesn't have any liquids. If necessary, add more breadcrumbs.

Place about 2 tbsp of filling in the middle of the circle.

Then place the rest of the filling around the circle, a little inwards from the edge.

Cover with the second puff pastry sheet and press the edge all round to seal.

Press carefully the middle of the circle with your hands so that you shape the center of the flower.

Cut every three fingers as shown in the photo. Make sure that you don't start cutting from the center but from the end of the pressed part outwards.

Twist the "petals" of the flower.

And press lightly so that they spread out a little.

Finally brush the center of the flower with egg and sprinkle just the center with sesame seeds or black sesame seeds. Bake at 180°C until golden brown.
