I was hungry last night, but didn't feel like eating rice. So I made this instead. My kids tried a bit and they loved it.

I was hungry last night, but didn't feel like eating rice. So I made this instead. My kids tried a bit and they loved it.

Heat the oil in the pan. I used medium heat.

Add the sweet potato. Stir from time to time until they are cooked. (you should be able to crush it easily with a spatula)

Add the onion. Lower the heat.

Add curry powder and salt. Stir until the onion becomes translucent.

Make a well in the center. Break the eggs there. You can also use one egg, but I think two eggs work better in this recipe.

Top with crushed black pepper. Cook to your preference. I like my yolks soft, so it probably took about 10 minutes on low heat. You might want to wait for five more minutes if you like firmer eggs.
