preheat grill/broiler to medium heat. Place the tofu cubes in a grill pan and grill/broil for 2-3 minutes turn them over cook until crisp and golden brown all over. Do not burn them.

heat oil in a wok or heavy frying pan.Add the green curry paste and cook over a medium heat. stirring constantly, for 1-2 minutes, until it gives of aroma.

stir soy sauce, lime leaves,sugar and vegetable stock into wok and mix well. Bring to boil then reduce heat to just simmering.

add asparagus or other veg and simmer gently for 5minutes.Meanwhile chop each piece of tofu into four and add to pan with peanuts.

toss to coat all ingredients in the sauce, spoon into warmed dish and serve immediately.
