Cilantro Tabouli Salad

Ingredients

  1. 2 cupBoiling water
  2. 1/2 tspSalt
  3. 1 cupBulghar wheat
  4. 1 cupCooked grits, warm
  5. 1 cupMinced cilantro
  6. 1/2 cupMinced green onion tops
  7. 1/4 cupOlive oil
  8. 1Juice of 1or 2 lemons
  9. 1Salt and pepper to taste

Cooking Instructions

  1. 1

    Put boiling, salted water over bulghar in medium bowl. Let sit for 30 minutes to absorb water.

    Stir In warm grits and mix. Toss all other ingredients into grain mixture. Add salt and pepper to taste.

    Chill to enhance flavor. Serve on lettuce as salad.
