Ingredients

4 servings
  1. 4 tbspolive oil
  2. 1 largewhite onion,peeled and finely chopped
  3. 300 gramsprepared pumpkin flesh ( without skin or seeds) cut into 1m cubes
  4. 2litre hot vegetable stock, made with 3 good quality veg stock cubes
  5. 250 gramsmedium shell pasta (conchiglie)
  6. 3eggs
  7. 50 gramsgrated cheddar cheese
  8. 1 pinchsalt and pepper to taste
  9. 3 tbspfreshly chopped flat leaf parsley

Steps

  1. 1

    heat oil in a large saucepan over medium heat fry the onions for about 5minutes until golden brown.Add the pumpkin and fry all for a further 2 minutes. Stir with a wooden spoon

  2. 2

    pour the stock over onion and pumpkin leave to simmer for 15 minutes with lid half on.

  3. 3

    remove lid season with salt and pepperAdd the pasta and cook uncovered over low heat for 6 minutes ,stir every 2 minutes .

  4. 4

    once pasta is cooked remove.pan from heat .Crack in the eggs and mix everything together for 30 seconds ro allow the broth to thicken

  5. 5

    stir in cheddar cheese and serve immediately,sprinkle with parsley.

    (meat,fish and nut free)
