3/4 cupdry bread crumbs
3 tbspgrated Parmesan cheese
2 tbspfresh parsley (chopped)
1/4 tsppaprika
1/4 tspeach pepper, dried oregano and basil (1/8 preferred)
6fresh or frozen catfish fillets (4 ounces each)
3egg whites (beaten)

Steps

In a shallow bowl, combine the bread crumbs,Parmesan cheese, parsley and seasonings.

Dip catfish in egg whites,then in the crumb mixture.

Arrange in a baking dish with coated nonstick cooking spray (13-in. x 9-in. x 2-in. dish)

Lightly spray fillets with the nonstick cooking spray.

Bake (uncovered) at 375° for 20-25 minutes or until the fish starts to flakes with a fork.
