preheat oven to 300

place quartered onions in botton of pot

place pork butt on top of onions and add salt and pepper to taste

pour chipotle chiles over top

pour dr pepper over chilies

add brown sugar to liquid stirring slightly to combine
- 7
cover pot and cook for at least 6 hours flipping roast 2 to 3 times during cooking process

if pork does not easily pull apart return to oven in 30 minute intervals until done

remove roast from pot and shred completely
- 10
spoon fat from top of liquid in the pot. return the meat to the pot and keep it in the juice until you need it
