preheat oven to 325
- 2
peel the potatoes and place them in a large bowl of ice water
- 3
mix flour, salt and pepper in a large bowl. you can use more or less salt and pepper. just whatever suits your taste

roll each potato in the flour mixture coating thoroughly

melt butter in a large skillet (I use cast iron) being careful not to burn it.

brown the potatoes lightly and evenly in the butter
- 7
transfer the potatoes into a 9 by 13 baking dish. be sure to put all the butter and "crispies" in there too.

cover with aluminum foil and bake about 30-35 minutes. remove aluminum foil and continue baking about 25-30 more minutes or until done

they should be crispy on the outside and soft on the inside

put them on your plate cut open with a fork and spoon more butter and "crispies from the baking dish
- 11
you could also add some cheddar cheese and bacon bits
