25 gramsbutter
6 slicerashers of streaky bacon
400 gramstrimmed leeks
3 mediumpotatos
1single cream to serve
1onion
1 liter1.4 litres of stock

melt butter in a large pot add diced onion and 3 rashers diced cook for about 5mins

add leeks and potato and sweat for 5mins

add stock and simmer for 30-40mins

wizz with a hand blender till smooth season and add cream. i grill the remaining rashers till really crispy then crumble them and sprinkle over too
