Ingredients

  1. 1 cupsifted cake flour
  2. 1 tspbaking powder
  3. 1/4 tspsalt
  4. 5egg yolks
  5. 2tsps. cold water
  6. 1 tspvanilla
  7. 5egg whites
  8. 1/2 cupsugar for egg yolks
  9. 1/2 cupsugar for egg whites

Steps

  1. 1

    Sift flour, baking powder and salt together. Set aside. Beat egg yolks with cold water and vanilla until light. Gradually add sugar, beating well until thick and lemon-colored. Set aside.

    Beat egg whites until soft peaks are formed. Add sugar gradually, beatinh well until very stiff but not dry. Fold egg yolks alternately with flour mixture into egg whites.

  3. 3

    Pour into prepared pans. Bake at 350°F. about 20-25 minutes. Cool and frost with your favorite icing.

  4. 4

    Any DESIRED ICING can be used!

Typically Sponge Cakes you'd fold your whites in your yoke and flour mixture. The more you play or in this case fold dry/heavy ingredients you lose the volume of your white mixture. However this recipe has good flavor. It uses an awful amount of eggs for only yielding one single layer 8" round. Which in turn made it chewy but had lots of aeration holes.
