Ingredients

  1. Fritter
  2. 1 cupSweet Potato - mashed
  3. 1 largeEgg
  4. 1/2 cupBrown Sugar
  5. 1 tspVanilla
  6. 1 tspBaking Powder
  7. 1/2 tspPumpkin Pie Spice
  8. 1/2 tspSalt
  9. 3/4 cupAP Flour
  10. 1Oil For Frying
  11. 1/4 cupPowdered Sugar
  12. Butter Sauce
  13. 4 tbspButter
  14. 1/2 cupSugar
  15. 1/2 tspVanilla
  16. 1/4 cupHalf and Half

Cooking Instructions

    Prepare butter sauce. In a small pot, melt butter over med-high heat, add sugar and stir for 3 minutes. Add vanilla and half and half. Stirring constantly, cook for another 3 minutes. Remove from heat and set aside.

    Mix together the first 7 ingredients. When well blended, stir in flour.

    Drop by scant tablespoon full in hot oil. Flipping fritters once or twice, cook until golden dark brown. Drain on paper towels.

    Arrange on a platter, sprinkle with powdered sugar. Serve with butter dipping sauce.

    Makes 20 to 24 fritters.
