Ingredients

  1. Streusel Topping
  2. 3 tbspall purpose flour
  3. 2 tbspgranulated sugar
  4. 2 tbspfinely chopped nuts/toasted oats
  5. 2 tbspfirm butter
  6. Muffins
  7. 1egg
  8. 1/2 cupmilk
  9. 1/2 cupbutter,melted and cooled
  10. 1 3/4 cupall purpose flour
  11. 1/4 cupgranulated sugar
  12. 1/4 cuppacked brown sugae
  13. 2 tspbaking powder
  14. 1 1/2 tspgrated lemon zest
  15. 1 tspground cinnamon
  16. 1/2 tspsalt
  17. 1 cupfresh strawberries(or blueberries/raspberries)

Steps

  1. 1

    Preheat oven to 400°F.Line muffin tin

  2. 2

    In a small bowl,mix Streusel ingredients. Cut 2 tablespoons firm butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions) until mixture is crumbly. Set aside.

  3. 3

    In a large bowl, beat egg with fork. Stir in milk and 1/2 cup melted butter. Stir in remaining muffin ingredients except berries just until flour is moistened. Fold in berries. Divide batter evenly among muffin cups. Sprinkle with topping.

  4. 4

    Bake 20 to 25 minutes or until golden brown. Cool 5 minutes; remove from pan to coolingrack. Serve warm or cool
