Ingredients

4 servings
  • 1 lbthin chicken cutlets
  • marinade
  • 1/2 cupplain Greek yogurt
  • 1/2 cupbuttermilk
  • 1lemon, both juice and zest
  • 2 clovegarlic, minced
  • 1 tspdried oregano
  • 1 tspsalt
  • 1/2 tsppepper
  • breading
  • 1 cuppanko bread crumbs
  • 1/4 tsporegano
  • 1 pinchgarlic powder
  • 1 pinchsalt
  • 1 pinchpepper

Steps

  1. 1

    Mix chicken and marinade ingredients in resealable bag and marinate 4 hours or overnight.

  2. 2

    Preheat oven to 375°. Spray cookie sheet with nonstick cooking spray.

  3. 3

    On a plate, combine breading ingredients. Remove chicken from marinade (it will retain a slight coating) and press both sides into bread crumb mixture.

  4. 4

    Bake 20 minutes. Turn oven to broil and broil 3 minutes, or until top is golden.
