  1. 3 lbground turkey; preferably white and dark meat mix
  2. 1yellow bell pepper; small dice
  3. 3 ozshallots; minced
  4. 2 bunchscallions; small dice
  5. 1leek; small dice
  6. 5 ozdried apricots; small dice
  7. 5 ozdried mango; small dice
  8. 3 tbspgaram masala
  9. 1 tbspground coriander seed
  10. 1 tbspdried basil
  11. 1 tbspthyme; minced
  12. 1 tbsponion powder
  13. 1 tbspgarlic powder
  14. 1 tbspcelery seed
  15. 2 tspwhite pepper
  16. 1egg
  17. 1/2 cupbreadcrumbs
  18. 1salt

Steps

  1. 1

    Combine all ingredients in a large mixing bowl. Mix well.

  2. 2

    Bake uncovered at 350° for approximately 45-50 minutes or until thermometer reaches 165°

  3. 3

    Variations; Sage, applesauce, parsley, ginger, cinnamon, star anise, cumin, cayenne pepper, fennel, cilantro, bacon, celery, carrots

  4. 4

    Tip: Try toasting the dried spices in a dry saute pan for a different flavor profile!
