Shiny & Tender Chicken Teriyaki

I wanted to make teriyaki chicken that stays tender and shiny.
My family loved it so much, it's a staple dish in our household.

These'll make great additions to lunch boxes.
It is nice to serve this with mayonnaise.

With this preparation the chicken will not harden and absorb the sauce very well.

If you'd like a gentle flavoured sauce use 2 tablespoons of soy sauce. For strong sauce use 3 tablespoons.

You can use chicken thighs instead of breasts. You don't need to score the meat in that case. Recipe by Atorie sara

Ingredients

4 servings
  • 2Chicken breasts
  • 2to 3 tablespoons ○Soy sauce
  • 1 tbsp○Mirin
  • 1 1/2 tbsp○Sugar
  • 2 tbspCake flour
  • 1 1/2 tbspKatakuriko
  • 2 tbspSake
  • 1Vegetable oil

Steps

  1. 1

    Remove the excess fat and trim the skins.

    Score the meat side of the chicken breast to cut the fibre of the meat. This makes the meat a bit more tender and helps it absorb the sauce more.

    Put the flour and katauriko in a plastic bag and mix well. Put the chicken breasts in to the bag one at a time and shake it to coat the chicken with the katakuriko evenly.

    This is how they should look..

    Heat the frying pan and place the chicken breast with the skin sides down. Cover and cook over low to medium heat for 5 minutes.

    Turn over the chicken and add the sake. Cover again and cook over low to medium heat for 8 minutes to cook through completely.

    Mix ○ ingredients and pour into Step 6. Make sure that you don't burn the sauce so cook over a very low heat. Coat both sides of the chicken well with the sauce.

    Make sure to keep the heat low. Otherwise the sauce will burn quickly.

    This is how the chicken should look. Once the sauce has been coated over the meat, it should be done.

    Slice the chicken breast with a sharp knife into the thickness of your liking.

    Transfer the chicken onto a serving dish and pour over the leftover sauce from the frying pan.

    If using chicken thigh meat, cut the chicken thigh into bite-sized pieces and cook as above. It is very easy! They are suitable for your lunch box.
