This is actually a bhutenese traditional dish but I have modified a bit and tasted really good. You can have it as side dish or with rice.

Cut the cheese into very fine pieces.

In a pan, put potatoes, chopped onions, capsicum, green chillies and vegetable oil. Then pour water till the level of the vegetables. Don't put too much water.

Bring it to boil for about 5 minutes in low flame. Then put salt and pepper. Mix well. Cover it if needed.

When the potatoes are cooked and water level is much more reduced, put cheese and stir. Keep on stirring until cheese is melted nicely.

Off the flame. Sprinkle some chilli flakes and garnish it with coriander leaves.
