Egg "Muffins"

I can't remember where I first saw this recipe but I've been making it for years. You can sub the ham for bacon, turkey, sausage or any other protein you like and I just use whatever cheese I have in the fridge. I've never made it using a full-sized muffin pan but I'm sure its possible using larger proportions. Just use your imagination or what's on hand and go with it! Hope you enjoy!!

Ingredients

  1. 1 cupstuffing (leftover or Stove Top instant)
  2. 6 largeeggs, beaten and seasoned w/ salt & pepper
  3. 1/2 cupham, diced
  4. 1/3 cupcheese, shredded
  5. scallions, finely chopped (optional)

Cooking Instructions

    Spray mini muffin pan with non-stick spray. Preheat oven to 350.

    Using large spoon or small rubber spatula scoop stuffing into bottom of each muffin cup, pressing down to form the bottom of each "muffin".

  3. 3

    Divide eggs into each muffin cup and top with ham (or other protein) and shredded cheese.

    Bake 6-8 minutes or til cheese is melted and eggs have fully cooked. Tops should be a bit browned. Top with scallions if desired. Serve warm.
