I wanted to do something different than throw the dove in a cockpit with cream soup.
Steps

Debone breasts if not done. Dab with paper towels to remove excess moisture. Season with salt and pepper.

Heat cooking oil in skillet and saute dove until lightly browned. Remove meat, lower heat and add butter. Sweat onion and celery until just beginning to turn opaque

Butter 2qt. Casserole dish or 9 in. Baking pan. Heat oven to turn 325°F.

If using stove top mix stuffing, hot water and celery, onion. layer in prepared baking dish with dove. Dot with butter cover with foil and bake 45 minutes, removing foil the last 15 minutes.

If using leftover stuffing, skip the water and just add veggies. Layer and continue as in step 6.

Serve with a salad as a main dish or as a side with a game bird dinner.
