Ingredients

  1. 1 lbbulk pork sausage, cooked & drained
  2. 4 ozmushroom slices (if use canned, make sure they're drained)
  3. 2 cupor 8 oz shredded Mozzarella cheese
  4. 1 1/4 cupgluten-free baking mix
  5. 12eggs
  6. 1 cupsoy milk
  7. 1 1/2 tspsalt
  8. 1/2 tsppepper
  9. 1/2 tspdried oregano leaves

  1. 1

    Heat oven to 350°F.

  2. 2

    Grease rectangular baking dish 13x9x2.

  3. 3

    Layer sausage, mushrooms, & cheese in dish.

  4. 4

    Beat remaining ingredients together & pour over sausage mixture.

  5. 5

    Bake until golden brown & set, about 30 minutes.
