Ingredients

12 servings
  1. 2 1/4 cuprolled oats
  2. 1 cupplain yogurt
  3. 1ripe banana
  4. 2eggs
  5. 1/4 cupbrown sugar
  6. 1 1/2 tspbaking powder
  7. 1 1/2 tspbaking soda
  8. 1 tspflax meal (ground flax)
  9. 1/4 tspcinnamon
  10. 1 pinchsalt
  11. 1 tspvanilla extract
  12. 1/2 cupChocolate chips (or go crazy for even more chocolatey goodness and make it 3/4 - 1 cup)

Steps

  1. 1

    Grease bottom and sides of muffin tins.

  2. 2

    Preheat oven to 400°.

  3. 3

    In a food processor blend all ingredients, except for chocolate chips, on high until oats are broken down and batter is smooth.

  4. 4

    Stir in by hand the chocolate chips.

  5. 5

    Fill muffn tins with batter equally. Bake 15-20 minutes til set, risen and light golden brown. Touching the top of the muffin with your finger should not leave indentation when baked through.

  6. 6

    Cool for 10 minutes before removing from muffin tins. Enjoy warm!
