Ingredients

  1. 1 boxPasta (rotini recommended)
  2. 1 cupSliced kalamata olives
  3. 1 1/2 cupBroccoli
  4. 1 cupSundried tomatoes
  5. 1 cupChopped red onions
  6. 2 cloveMinced garlic
  7. 1 cupCrumbled feta cheese
  8. dressing
  9. 3/4 cupOlive oil
  10. 1/4 cupLemon juice
  11. Spices
  12. 1Salt
  13. 1Black pepper
  14. 1as needed Additional lemon juice
  15. 3/4 cupFresh mint

Cooking Instructions

    Cook pasta to al dente, rinse in cold water to cool once done

  2. 2

    Sauté broccoli, onion, and garlic until mostly, but not fully, cooked. (So it can be soft but still a little crunchy)

    Halve the olives, and slice the sun dried tomatoes.

  4. 4

    Chop up the mint so that it is nearly minced

  5. 5

    Mix together steps 1-4

  6. 6

    Whisk the olive oil and lemon juice together and drizzle over the pasta salad

  7. 7

    Add salt, pepper, and more lemon juice as needed

  8. 8

    Sprinkle feta on top

  9. 9

We love this salad, friends request it when they are coming over. Church dinners
I make enough for 100 people there is never any left over.
I add X teas to mine, whatever I am in the mood for.
