I had a lot of over-riped bananas sitting on the counter and it so happens that the weather was rather cloudy which makes me crave for some easy-cheesy fried snacks :3

I had a lot of over-riped bananas sitting on the counter and it so happens that the weather was rather cloudy which makes me crave for some easy-cheesy fried snacks :3

Peel off all the bananas.

Using a fork, crush the bananas. It's okay to have some lumps here and there, doesn't have to be so smooth.

Add the flour, corn flour, vanilla essence (better if sifted together) and sugar, if you use any (i did not, the bananas were really sweet). Mix thoroughly using a spatula.

After all the ingredients have been incorporated, add in the grated cheese. Again, mix thoroughly using the spatula.

Heat the cooking oil in a deep frying pan with medium-small heat. Wait until the oil is hot enough.

Using 2 spoons in both hands (you can use either table/tea spoon, depends on the size that you want your bombs to be), scoop the batter with the spoon your right hand and shape it into a ball with the spoon on your left and drop it into the heated oil (careful of splashing hot oil). This way you can do it without messing your hands. Or you can just put the batter in an icing bag and pipe it out little by little.

You can test out with a tiny amount of batter first to check if the oil is hot enough.

Cook until golden brown. Don't forget to flip the dough to get even browning. The frying might take around 3-5 minutes.
