Today I want to share some facts which hardly people outside Gujarat know. And that item is Gujarati Snack KHAMAN DHOKLA!!
When your say Dhokla or Khaman Dhokla, a yellow spongy piece comes into your mind.. yaaah??
I wish to say that Dhokla and Khaman are both separate dishes, with Separate Ingredients, Separate Recipes and Separate Tastes..
What your call Dhokla is actually not Dhokla but it is Called Khaman in Gujarat.. It is made out of pure Besan.
While Dhokla is very different, made from Rice and Chana Dal, requires one day for preparation only. And is sour or sweet-sour in taste. Let me show your the pics so that today you will be able to identify what Khaman is and what Dhokla is!!

How to make Real Gujarati Dhokla?. Soak well 3cups Rice and 1 cup Chana Dal for half of the day. Once soaked well, make sure your grind it coarse & not fine like Idli batter. Then in mixture, mix well 1-2 cup of Sour Curd, cover and keep in the Sunlight for more than half of the day. By doing so, batter will get fermented due to heat of sunlight and be sourer. Then add salt as per taste, crushed green chilli, ginger, garlic, coriander leaves and mix it well.

Boil water in Idli Cooker. Spread 1 cup of batter in oil-greased plate and make a thin layer. Sprinkle 4 5pinch of jeera/black pepper/red chilli powder over the layer. Now put this plate in cooker and steam it for 20-25 minutes.

Take the plate out of cooker and insert a tooth pick. If batter still sticking to it, then it's still raw. If not, then it is cooked well. Now make criss cross slices in the plate and enjoy Real Gujarati Dhokla by dipping into Peanuts Oil or Garlic Red Chilli Chutney. (For colour change, your can also add red chilli or turmeric in the batter and mix before steaming. (See the pic)
