Ingredients

  1. 1 lblonganeza broken up in to pieces
  2. 1chayote cut up into small chunks
  3. 1/2onion sliced
  4. 6mushrooms sliced
  5. 2jalapenos sliced
  6. 10eggs cracked in a bowl
  7. 1salt to taste
  8. 1 tbspcooking oil

Steps

  1. 1

    In large skillet heat oil then add longaneza.

    When longaneza is cooked thoroughly and is starting to crisp add all the listed veggies.

    When all the veggies are fork tender especially the chayote then add the eggs.

    Stir occasionally until eggs are cooked and fluffy , add salt to taste. Keep in mind that the longaneza already has salt added.

    Serve with refried beans and some fresh avacado.
