Ingredients

  1. 45 gramsbeetroot
  2. 2 tbspcocoa powder
  3. 1 dashground cinnamon
  4. 2eggs
  5. 1 tbspAgave nectar
  6. 1 tbspcoconut oil
  7. 50 gramsdessicated coconut
  8. 25 gramschopped dark chocolate

Steps

  1. 1

    Blend up beetroot with eggs, cocoa powder, cinnamon and agave nectar.

  2. 2

    Fold in dessicated coconut and chopped chocolate.

  3. 3

    Heat coconut oil gently in a pancake pan .

  4. 4

    Add spoonfuls of mixture to the pan to create a palm sized circle and cook on a medium heat until they need flipping.

  5. 5

    Serve with raspberry jam and greek yoghurt.
