Slow Cooker or Instapot French Onion Soup

I ended up adding about 1 cup of Sherry when I added the beef stock and it worked out really well. I’ll also suggest you salt and pepper the soup. It seems to need it. I became impatient and tried this recipe in the instapot and it turned out awesome. Set it for 35 to 40 minutes on high. All in all, very good. Everyone enjoyed it.

I love French Onion Soup and have tried, unsuccessfully, to make it from a couple recipes. I found this recipe on Facebook and decided to give it a try. Not only is it much easier, it's very good. The one thing it seems to be missing is the wine. I'm going to figure out how to introduce that into the recipe and will update once I've got it right. I hope you enjoy!

Ingredients

8 servings
  1. 3 TBSPButter
  2. 2 TBSPBrown Sugar
  3. 3Large White Onions cut loosely into petals
  4. 64 ozBeef Stock
  5. 1 TBSPWorcestershire Sauce
  6. 1 Sprigfresh Thyme
  7. 1Bay Leaf
  8. Loafthe thin French Bread
  9. Mozzarella Cheese
  10. Parmesan Cheese
  11. Salt and pepper to taste

Steps

    In a large saute pan, add the butter and brown sugar. Stir to combine and melt over medium high heat.

    Add the onions and stir till combined and the onion turns clear.

    Pour the mixture into a large slow cooker. Turn on high

  4. 4

    Add the beef stock, Sherry (or red wine), Worcestershire, thyme, and bay leaf

  5. 5

    Cook in the slow cooker on high for 3-4 hours. Cook in the Instapot on high for 35 to 40 minutes.

    Spoon into individual oven safe bowls and place a slice or two of the french bread on top. You can cut it into cubes if that will make it easier to eat. Add Mozzarella cheese and Parmesan cheese on top. Another option might be to buy several small round loaves of bread, dig out the middle and toast those pieces to place back into the soup. Then pour the soup into the bread bowls and broil from there.

    Place into the oven on a baking sheet to prevent spills and broil on high for 5-10 minutes or until the cheese is golden brown.

    Remember, the bowls will be very hot, so handle with care. Enjoy!
