Steps

Peel the potatoes and grate using the big side.

Put on a plate and microwave for two minutes or alternately wring them in a kitchen towel to remove excess moisture

Put your oil on a frying pan and add the potatoes from the microwave.

Sprinkle salt and pepper over the potatoes as they shallow fry. Use a spatula to press them flat.

Turn over after two to three minutes and fry the other side the same way

Enjoy hot. The crunchy outside contrasts the soft inside wonderfully
