most weekend I buy a lot of chicken and marinate overnight so I can grill the next day; it help me save time when cooking. once I have grilled chicken in the fridge making my food decision comes very easily.

Wash chicken and pat dry, blend pepper and onions and mix in garlic and ginger paste together with the pepper blend, salt, knorr cube, oregano, soy sauce, coriander leaf and set aside

Combine chicken and the mixed pepper paste for marinade and in a bowl and cling film the bowl and refrigerate overnight

Preheat oven on 180degree and turn on the grill. remove chicken and place in a baking dish or an oven tray and send to the oven for about 1 hour, I had to do 2 batches cos the bought a quarter carton of chicken

Once the chicken is cook through inside and the body is getting dry and abit brown remove from oven and set aside and serve with meal of the day and store the remaining in the fridge for emergency meal prep
