For the pastry put flour and butter in a blender, pulse until it resembles breadcrumbs. Add enough water to pastry to for a soft dough. Wrap in saran wrap and refrigerate.

Put oil into saute pan and cook onions until translucent, remove and allow to cool.

In a mixing bowl add eggs, one egg yolk, tomato, cheese, onions, cream, salt and pepper. Mix well.

Butter a 10 inch quiche pan. Dust counter with flour roll dough out and carefully place in quiche pan.

Add egg mixture to quiche pan top with sliced cheese (optional) place in a preheated oven at 180℃/350℉. Carefully put pan onto middle shelf cook for 20 minutes. After that increase heat to 200℃/400℉ and finish cooking for 10-15 minutes.

Carefully remove and allow to cool slightly, then enjoy
