This is exactly what I would ask for for my last meal. This chicken, gravy from the drippings, my mother-in-law's mashed potatoes, grilled sweet corn on the cob and my mom's chocolate cake.

Ingredients

6 servings
  1. 4 lbroaster/fryer chicken
  2. 1 envelopedry Italian dressing
  3. 1 tspseasonings salt (like Lawrey's)
  4. 2 1/2 tspground black pepper
  5. 2 1/2 tspdry mustard
  6. 2 tspgranulated garlic
  7. 3 tbspolive oil, divided
  8. 2 tbspButter, melted
  9. 1juice of one lemon
  10. 1 smalllemon, halved
  11. 1 smallsweet onion, quartered

Cooking Instructions

    Mix all dry ingredients in a small bowl.

    Wash chix & pat dry, place incontainer. Rub the chix with approximately 1Tbsp oil.

    Massage the dry ingredients into the chix and under the skin. Don't forget the under side and in the cavity.

    Cover and refrigerate overnight if you have time. (Truly recommended)

    Preheat oven to 350° Place chix in Dutch oven.

  6. 6

    Place lemon halves and onion quarters inside chix cavity.

  7. 7

    Mix melted butter, 2T oil & lemon juice. Drizzle mix over chix, massage in gently.

    Bake for 1 1/2- 2 hrs basting every 30 mins and once more before serving. (I leave the lid on my chicken for at least the first hour to build up the juices)
