This is exactly what I would ask for for my last meal. This chicken, gravy from the drippings, my mother-in-law's mashed potatoes, grilled sweet corn on the cob and my mom's chocolate cake.

This is exactly what I would ask for for my last meal. This chicken, gravy from the drippings, my mother-in-law's mashed potatoes, grilled sweet corn on the cob and my mom's chocolate cake.
Cooking Instructions

Mix all dry ingredients in a small bowl.

Wash chix & pat dry, place incontainer. Rub the chix with approximately 1Tbsp oil.

Massage the dry ingredients into the chix and under the skin. Don't forget the under side and in the cavity.

Cover and refrigerate overnight if you have time. (Truly recommended)

Preheat oven to 350° Place chix in Dutch oven.

Place lemon halves and onion quarters inside chix cavity.
- 7
Mix melted butter, 2T oil & lemon juice. Drizzle mix over chix, massage in gently.

Bake for 1 1/2- 2 hrs basting every 30 mins and once more before serving. (I leave the lid on my chicken for at least the first hour to build up the juices)

I created this recipe while recalling how it tasted, referring to a few recipes, and I simplified those recipes to make this easier.The key is not to burn the garlic. The capers are salty, and you make use of their saltiness to season the sauce.I only season the meat with salt and pepper in this recipe, but before you put the chicken back into the sauce, check the taste, and adjust to your liking.
