Ingredients

4 servings
  1. 1(15 ounce) can chickpeas, drained and rinsed
  2. 1/2 cuproasted red bell peppers (2 peppers)
  3. 1/4 tspminced garlic, or 1 clove garlic
  4. 1/4to 1/2 cup olive oil
  5. 1 tspground cumin
  6. 1/2 tspGreek oregano
  7. 1juice of 1/2 lemon or 2 tablespoons fresh lemon juice
  8. 1/4to 1 teaspoon kosher salt (to taste)
  9. 1/2 tsppaprika (Hungarian sweet or smoked Spanish)

Steps

    In a blender or food processor, combine the chickpeas, bell peppers, garlic, olive oil, lemon juice, cumin, oregano, and salt.

    Mix until smooth and creamy.

  3. 3

    Add a bit of oil or water to thin it out if it's too thick.

  4. 4

    Place in a bowl and drizzle with a little extra olive oil and a sprinkle of paprika.

  5. 5

    Serve with pita chips or vegetables.

  6. 6

    *To roast the peppers, place them directly on the stove burner on medium high, turning 3 times so all sides blacken. This takes about 10 minutes. Place in a bowl tightly covered with plastic wrap for 10 minutes, then rinse off the skins and chop.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
